Bamboo Shoot Stir Fry Recipe is prepared from the stemmed bamboo shoots of the bamboo plant. They are consumed across the North East and features heavily in various tribal cuisines of the whole region. This stir fry is a simple recipe that can be prepared on a weekday for dinner or packed away for lunch boxes. Serve Bamboo Shoot Stir Fry Recipe with phulka or as a side dish with rice.

        Ingredients

  • 2 cups Bamboo shoots, julienned or cut into thin strips ( buy here )
  • 6 Button mushrooms, or cremini mushrooms, sliced thin
  • 4 Spring Onion (Bulb & Greens), finely chopped
  • 1 cup Red Yellow and Green Bell Peppers (Capsicum), julienned
  • 1 tablespoon mustard oil
  • 1-1/2 teaspoon Red Chilli flakes
  • Salt, to taste 

    Methods: 
  • To start making Bamboo Shoot Fry, heat up a cast-iron skillet on medium heat.
  • Add oil when it's hot.
  • Add chopped spring onions, and saute for 2 minutes.
  • Add bamboo shoots and cook for 2 minutes.
  • Add chopped sweet peppers and mushrooms with the required salt and cook until all the vegetables are cooked and crispy.
  • Sprinkle chili flakes and stir for a minute.
  • Check for salt and serve Bamboo Shoot Stir Fry with phulkas, rotis, or as a side dish with rice.
